How to make the Skinny Gin Fizz.

Build the foam before adding ice, chill and dilute in the second shake, then use the soda to lift the finished head rather than flattening it.

Ingredients

  • 1.5 oz London dry gin
  • 0.75 oz Cordial Craft Zero-Sugar Lime Cordial
  • 1 egg white
  • Cold soda water, to top
  • Lime wheel for garnish
  • Mint sprig for garnish
Keep the soda out of the shaker: Carbonation belongs in the glass after the foam has been built and the drink has been strained.

Method

  1. Combine the base. Add gin, Cordial Craft, and egg white to a shaker without ice.
  2. Dry shake. Shake vigorously without ice for about 15 seconds.
  3. Shake with ice. Add ice and shake hard for another 15 seconds.
  4. Strain. Strain into a Collins glass.
  5. Lift the foam. Poke a small opening in the foam layer and pour cold soda water through the center.
  6. Garnish. Finish with a lime wheel and mint sprig.
Pour through the center: The small opening gives the soda a path beneath the foam, allowing the head to rise instead of spreading the bubbles across the surface.
