Clover Redux

Clover Redux is a raspberry gin sour built around fresh berries, a full dry shake, and Cordial Craft Zero-Sugar Lime Cordial. The berries supply the color and aroma; the egg white gives the drink its soft cap of foam; the cordial keeps the citrus and sweetness in proportion.

How to make Clover Redux.

The order matters: lightly muddle the berries with the cordial, build the foam without ice, then chill and dilute the drink in a second shake.

Ingredients

  • 2 oz gin
  • 0.75 oz Cordial Craft Zero-Sugar Lime Cordial
  • 7 to 8 fresh raspberries
  • 1 egg white
  • Lemon zest for expressed oil
  • 3 raspberries on a cocktail pick or skewer
Berry note: Use ripe raspberries, but do not grind them into a seed-heavy purée. A light muddle is enough to release color, juice, and aroma.

Method

  1. Muddle the berries. Add Cordial Craft and raspberries to a shaker, then lightly muddle the berries.
  2. Add gin and egg white. Add the gin and egg white to the shaker.
  3. Dry shake. Shake without ice for about 15 seconds to begin building the foam.
  4. Shake with ice. Add ice and shake hard for 10 to 15 seconds, until chilled and properly diluted.
  5. Double strain. Double strain into a coupe or Nick and Nora glass.
  6. Finish and garnish. Express lemon zest over the surface and discard it, then garnish with 3 raspberries on a cocktail pick or skewer.
Why double strain? It catches berry seeds and pulp while protecting the smoother texture of the finished drink.

Clover Redux works because the raspberries are treated as fresh produce, not syrup; the foam is built before the ice is added; and the drink is strained finely enough to stay smooth. Each step solves a different part of the finished texture.

Muddle

Stop once the berries break down.

You are trying to release juice and color, not pulverize the seeds. Over-muddling makes the fine strain work harder and can add bitterness.

Dry shake

Give it the full 15 seconds.

A token dry shake produces a thin cap. Use a firm seal and shake with purpose before adding ice.

Garnish

Express, discard, then add berries.

The lemon zest is used for its oil, not as the visible garnish. The three raspberries provide the finished presentation.
