Matriarch Sour
The Matriarch Sour is an indigo-toned gin sour built with Empress 1908 Indigo Gin, Cordial Craft Zero-Sugar Lime Cordial, and egg white. A dry shake builds the foam, a second shake chills the drink, and a light dusting of blue matcha finishes the indigo pour without burying it.

How to make the Matriarch Sour.
The recipe is short, but the two-stage shake is not optional decoration. It is what gives the drink a stable foam cap, proper dilution, and a smooth surface for the blue-matcha finish.
Ingredients
- 2 oz Empress 1908 Indigo Gin
- 1 oz Cordial Craft Zero-Sugar Lime Cordial
- 1 egg white
- Fresh ice
- Blue matcha powder for garnish
Method
- Combine. Add the gin, Cordial Craft, and egg white to an empty shaker.
- Dry shake. Shake without ice for 10–15 seconds to begin building the foam.
- Wet shake. Add ice and shake again until the drink is thoroughly chilled.
- Double strain. Strain through both a cocktail strainer and a fine strainer into a chilled coupe or Nick and Nora glass.
- Garnish. Finish with a light dusting of blue matcha.
The visual drama still depends on basic sour technique.
Empress gin supplies the indigo color, Cordial Craft supplies the lime, acidity, sweetness, and body, and egg white changes the texture. The drink succeeds when those elements stay distinct: a chilled sour beneath a firm, even foam cap with only enough matcha to sharpen the presentation.
Build structure before adding ice.
The dry shake gives the egg white time to disperse before chilling and dilution begin.
Use the second shake to finish the drink.
The wet shake chills and dilutes the sour after the foam has already begun to form.
Leave some white foam visible.
A restrained dusting keeps the contrast between the indigo drink, pale cap, and blue garnish.
Treat each stage as a separate job.
The first shake builds foam, the second controls temperature and dilution, and the strain determines how even the finished cap appears.
Give the egg white the full 10–15 seconds.
Dry shake: A token dry shake can leave the foam loose and irregular. Shake with intent before the ice goes in.
Use enough ice and shake until cold.
Wet shake: The second shake should not merely cool the outside of the tin. It supplies the dilution that keeps the sour from drinking sharp.
Dust from above and stop early.
Matcha: Use a fine sieve or pinch a very small amount over the foam. Too much powder muddies the surface and can dominate the first sip.
Batch the gin-and-cordial base, not the egg white.
Pre-combine the stable liquid ingredients and keep the base cold. Add egg white to each measured serving so every drink receives the same dry shake, wet shake, and fresh foam.
Contains egg.
The standard Matriarch Sour contains egg white. Disclose the ingredient wherever the drink is served. Use a suitable foaming alternative only when its label and handling fit the guest’s needs, and test its volume and shake time before service.
Questions before the dry shake.
The details that preserve the foam, indigo presentation, and balance of the house spec.
Can I use another gin?
Yes, but the visible color will change. The house recipe uses Empress 1908 Indigo Gin because its indigo appearance is part of the drink’s identity.
Can I replace the egg white?
A suitable foaming alternative may be used. Expect the foam volume, texture, and ideal shake time to change, so test the substitute before serving it as the house recipe.
Why double strain the Matriarch Sour?
The fine strain removes ice fragments and helps the foam settle into a smoother, more even cap.
Can I batch the cocktail?
Batch and chill the gin-and-cordial base. Add the egg white and perform both shakes for each individual serving.
A dramatic cocktail that still rewards disciplined technique.
The color brings the first look, but the two-stage shake, even foam, and measured garnish make the drink feel finished. Cordial Craft keeps the sour structure concise while the gin and matcha carry the visual identity.
