How to make Fire Foam.

Use the measured quantities below, then follow the ordered method.

Ingredients

  • 1.5 oz tequila of choice
  • 0.5 oz mezcal
  • 1 oz Cordial Craft Zero-Sugar Lime
  • 0.75 oz Gran Malo Tamarind Liqueur
  • 1 egg white

Method

  1. Add all ingredients to a shaker.
  2. Dry shake without ice for 10 to 15 seconds.
  3. Add ice and shake for 10 to 15 seconds.
  4. Double strain into a coupe.
  5. Garnish with Tajín rim and 3 bitters drops.

This recipe contains egg. Austin prefers a freshly separated shell egg white for the fullest traditional foam. ‘Fresh’ does not mean pasteurized or pathogen-free. Do not assume ordinary grocery-store shell eggs are pasteurized; confirm that the carton affirmatively says ‘pasteurized’ or ‘treated to destroy Salmonella.’ A USDA Grade A or AA mark alone does not establish pasteurization. The egg remains raw in this cocktail. Refrigeration, alcohol, citrus, and shaking are not substitutes for pasteurization. FDA recommends a pasteurized shell egg or pasteurized egg product for recipes served raw. Children, older adults, pregnant people, and people with weakened immune systems should avoid raw or undercooked egg. Keep eggs refrigerated, use clean, uncracked eggs, and wash hands, utensils, equipment, and work surfaces after contact. Pasteurized egg products and non-egg foamers may perform differently; follow their labels and adjust technique. Commercial food facilities must follow applicable local requirements, including any required consumer advisory and allergen notification.
