Frozen Skinny Strawberry Daiquiri with Cordial Craft

Real strawberries, white rum, and a bright lime finish: this is the frozen Skinny Strawberry Daiquiri, made in a blender with ice. Cordial Craft brings the lime character and sweetness without a separate pour of simple syrup.
Frozen, not shaken. This version uses a cup of berries and blended ice. The shaken version uses two muddled strawberries and is strained into a chilled glass. They are different recipes, not interchangeable methods for the same mix.
Ingredients
- 2 oz white rum
- 0.75 oz Cordial Craft Zero-Sugar Lime Cordial
- 1 cup hulled fresh strawberries, or unsweetened frozen strawberries
- 1 cup ice to start, with more available to adjust the texture
- Ice-cold water as needed for dilution and blending
- Optional: 1/8 teaspoon food-grade xanthan gum to start, up to 1/4 teaspoon total for this full blender batch
- Optional: a tiny pinch of salt
- A strawberry or lime wheel for garnish
Method
- Chill the rum, cordial, berries, and serving glass. Frozen strawberries give the blender a colder starting point.
- Add the rum, cordial, and strawberries to a blender, with the salt if using. Blend briefly to make a liquid base. If using xanthan, sprinkle in 1/8 teaspoon and blend to disperse it before adding the ice. Follow your blender’s instructions; never reach into a running blender.
- Add the ice. If you prefer a fuller texture after blending, work in a little more xanthan, keeping the total at or below 1/4 teaspoon for this full batch. More is not always better.
- Blend just until smooth and frosty. If the mixture is too stiff to circulate, add ice-cold water a little at a time. If it is too loose, blend in a little more ice. Follow your blender’s fill limits and operating instructions.
- Taste for balance and strength, then pour into a chilled glass large enough for the blend. Garnish and serve immediately.
Build dilution into a frozen drink
Alcohol lowers the mixture’s freezing point, so a stronger pour can leave a frozen drink softer and quicker to lose its slushy texture. Water is part of the recipe, not an afterthought: it comes from the berries, the ice as it melts, and any cold water you add. A higher-proof rum may need more dilution than a standard-strength rum.
Adjust the water and ice together. A small addition of cold water can lower the alcohol concentration and help the blender circulate, but pouring water into an already loose drink makes it thinner. In that case, add ice or use less rum in the next batch. Keep ingredients cold, avoid unnecessary blending, and serve promptly.
For repeatable batches, weigh your berries and ice and record the water you add once the flavor and texture are right. Cups of ice vary with cube size, so there is no single finished ABV implied by these measures. Dilution lowers alcohol concentration; it does not remove the alcohol already poured.
Optional texture adjustment
For a smoother blend that separates less quickly, xanthan gum is a useful optional addition. Start with a level 1/8 teaspoon for the full recipe above. For a fuller texture, increase a little at a time to 1/4 teaspoon total—not another 1/4 teaspoon per glass. Blend it into the liquid base before the ice so it disperses evenly. Too much can make the drink gummy.
This is a starting range to adjust to your berries, ice, and blender, not a substitute for dilution. Steve the Bartender uses 1/4 teaspoon in his frozen daiquiri; our strawberry-and-cordial blend is different, so we begin with less. Once you find the texture you like, weigh that amount on a precision scale and record it with the full batch weight for consistent repeats.
Using a frozen-drink machine? This is a blender recipe. A machine that freezes liquid has its own alcohol, sugar, and ingredient requirements; follow its manual rather than loading this fruit-and-ice recipe unchanged.
Make it without rum
Replace the rum with 2 oz chilled still water or coconut water, then adjust the ice to the texture you like. Removing alcohol changes how the mixture freezes, so the same amount of ice can give a firmer result.
Use unsweetened berries for their fruit flavor without extra sweetener. Strawberries contain natural sugar, so this is a Skinny cocktail—not a zero-sugar drink.
