How to make Earl Grey MarTEAni.

Use the measured quantities below, then follow the ordered method.

Ingredients

  • 2 oz Earl Grey-infused gin
  • 1 oz Cordial Craft Zero-Sugar Lime
  • 1 egg white
Supporting preparation and ingredient notes: For Earl Grey-infused gin, combine one 750 mL bottle of London dry gin with 7 g (about 0.25 oz by weight) loose-leaf Earl Grey tea or 3 to 4 tea bags totaling approximately 7 g. Infuse for about 2 hours and taste at 1 1/2 hours. A little tannic bitterness is welcome, but strain sooner if it becomes stronger than desired. If convenient, gently invert or stir the infusion 2 to 3 times; this is optional. Strain thoroughly and transfer to a clean, labeled container.

Method

  1. Add all ingredients to a shaker.
  2. Dry shake for about 15 seconds.
  3. Add ice and shake for 10 to 15 seconds.
  4. Double strain into a coupe or Nick and Nora glass.
  5. Garnish with lemon twist and optional sugar rim.

This recipe contains egg. Austin prefers a freshly separated shell egg white for the fullest traditional foam. ‘Fresh’ does not mean pasteurized or pathogen-free. Do not assume ordinary grocery-store shell eggs are pasteurized; confirm that the carton affirmatively says ‘pasteurized’ or ‘treated to destroy Salmonella.’ A USDA Grade A or AA mark alone does not establish pasteurization. The egg remains raw in this cocktail. Refrigeration, alcohol, citrus, and shaking are not substitutes for pasteurization. FDA recommends a pasteurized shell egg or pasteurized egg product for recipes served raw. Children, older adults, pregnant people, and people with weakened immune systems should avoid raw or undercooked egg.
