How to make Hibiscus Hurricane.
Use the measured quantities below, then follow the ordered method.
Ingredients
- 2 oz hibiscus-infused Jamaican rum
- 0.5 to 0.75 oz Cordial Craft Zero-Sugar Lime
- 0.75 oz passion fruit purée without added sugar
- Optional: 1 barspoon Sadaf Sour Pomegranate Molasses (contains added sugar)
Method
- Add all ingredients to a shaker tin or jar.
- Whip shake vigorously with a few cubes.
- Dump into a hurricane glass.
- Top with crushed ice.
- Garnish with a mint bouquet.
Make the hibiscus infusion.
One 750 mL bottle of spirit, 25 g dried hibiscus, and 100 mL water. Use Jamaican rum for this Hurricane; the same infusion method also works with tequila.
Bloom the hibiscus.
Place 25 g food-grade dried hibiscus flowers (about 0.9 oz by weight) in a heat-safe container. Add about 100 mL very hot or just-boiled water: 3.4 US fl oz, or about 6¾ US tablespoons.
Move away from heat, then add the spirit.
Remove the container completely from the heat. With no open flame, lit burner, hot element, spark, or other ignition source nearby, carefully add one full 750 mL bottle of the named spirit. The spirit cools the small bloom; no separate room-temperature cooling step is required.
Never pour or handle high-proof alcohol near an open flame or active heat source.
Infuse for 4–6 hours.
Start timing when the spirit is added. Gently invert or stir 2–3 times if convenient; this is optional.
Strain and label.
Strain thoroughly and transfer to a clean, labeled container.
Choose the passion fruit purée.
We use Les vergers Boiron 100% passion fruit purée for its vivid fruit character and consistency. Another 100% passion fruit purée with no added sugar works well, too.

Optional pomegranate depth.
One barspoon of Sadaf Sour Pomegranate Molasses adds concentrated tartness. The Hurricane is complete without it. This modifier contains added sugar, so leave it out for a build without added sugar.
